Taipei, Regent Taipei B2 INLUXE | Jiyun (霽雲) Premium Bird's Nest Tasting. This afternoon I joined Brenda and Jiyun, a new bird's nest brand, for a collaborative tasting salon. Jiyun's bird's nests are produced in a cleanroom in Malaysia, and each nest has a traceability barcode so it can be traced back; they also select only the top 2% of qualified nests from a nature reserve. Today we tried four different preparations and tasting methods—room temperature with gold leaf, with hot chicken soup, with grape sorbet, and finally a blind tasting comparing the strengths and weaknesses of two kinds of bird's nest. In the afternoon I enjoyed the bird's nest with several lovely ladies, paired with plum wine (Joyaus) from founder Eddie's cousin's brand, and afterward I exchanged thoughts and feedback with Eddie & Brenda.
