Location: Hsinchu - Sato-ya Sanuki Udon & Donburi Travel Notes Summary: Hsinchu - Sato-ya Sanuki Udon & Donburi. Classical-style description: A new shop just opened in Hsinchu, the menu focuses on udon noodles, the sign at the door says Sato-ya, on the right side of Guanghua East Street. There's a Sanuki prefecture in Japan, with over 800 udon shops large and small, famous as a synonym for udon in the island nation, that is Sanuki udon. Sit down, served tea and handed a menu, since it's the signature dish, of course order it. Freshly cut and made by hand, only then is it fresh. Half a cup of soy sauce placed in front, add sesame for sweetness, pour in green onions and grated radish, seasonings enhance flavor with a slight saltiness. Noodles white and laid with sea salt, stir into the cup with red accents, gently send to the tip of the tongue and chew carefully, wheat flavor subtly appears. Refreshing, not greasy, skin smooth and soft, chewy with enough texture, finish with warm tea to soothe the throat, this meal totaled over a hundred NTD.
