Travel note summary: Wallace Institute in Hsinchu is probably the hottest spot on the anonymous food board lately. From reading posts by board friends, I learned that this shop is run by Steve, a foreign teacher at NCTU. It boasts an all-English environment—from entering, ordering, to paying, the waitresses speak English to you. But even if your English isn't great like mine, don't worry, because the waitresses also speak Chinese, so Chinese works too.
