Travel note: Tin Heung Lau in Tsim Sha Tsui, Hong Kong, is a very famous old restaurant that has been open for nearly 70 years. Their signature crab roe shark fin soup—a small bowl that takes the roe from about six or seven hairy crabs to make—paired with a fragrant, sour dressing made from a blend of Zhenjiang and Shanghai vinegars, is absolutely exquisite. There's also Longjing tea shrimp, crispy fried frog, smoked yellow croaker, and tower vegetable with cured pork—each dish is a classic that makes you nod in satisfaction. Add to that over two catties of rich, aged yellow wine (over 20 years old) and premium pre-rain Longjing tea, averaging over HKD 2,000 per person (about TWD 10,000), it was a truly impressive and wonderful dinner!
